1 cup chopped onions
1 x clove garlic minced
1 tbl vegetable oil
1 lb ground turkey
1 cup chicken broth or lower sodium chicken
broth
1 x 14 1/2-ounce can stewed tomatoes
1/3 cup Grey Poupon Dijon Mustard
1 tbl chili powder
1/8 tsp ground red pepper or more
1 x 15-ounce can cannellini beans drained and rinsed
1 x 8-ounce can corn drained
Tortilla chips
Shredded Cheddar cheese
Instructions:
Instructions: 1. In 3-quart saucepan, over medium-high heat, sautee onions and garlic in oil until tender. Add turkey; cook until done, stirring occasionally to break up meat. Drain.

2. Stir in chicken broth, tomatoes, mustard, chili powder and pepper. Heat to a boil; reduce heat. Simmer for 10 minutes. Stir in beans and corn; cook for 5 minutes. Top with tortilla chips, shredded cheese and cilantro if desired.
