Instructions: Combine sugar, flour, and salt. Cut in butter, mix thoroughly.

Reserving one teaspoon egg white for crust, beat eggs well and add to previous mixture and blend until smooth. Cut peeled lemon into paper thin slices (about 1/3 cup). Add water, rind, and slices to sugar mixture and blend. Pour into bottom crust. Cover with top crust; brush with egg whites and sprinkle with sugar and cinnamon. Bake at 400 degrees for 30-35 min.
