Ingredients:

1 cup flour
1/3 cup brown sugar
2 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
1 x egg beaten
3/4 cup milk 1 c for peanut variation
1 cup 100% Bran
Instructions:
Instructions: Preheat to 400 degrees. Oil 12-15 muffin cups. In bowl, combine flour, sugar baking powder, salt and soda. In small bowl, blend together egg, milk, and oil; stir in Bran. Let stand 5 minutes. Add ingredients for desired flavor; mix til well combined. Stir into flour mixture just to blend. Do not over mix. Fill muffin cups 2/3 full. Bake 20-25 minutes. Cool on rack.

For peanut butter muffins: add 1/3 c peanut butter and 2 T honey

For zucchini muffins: add 1/2 c grated zucchini, 1/3 c chopped walnuts, 1/2 tsp cinnamon.

For molasses-cheddar muffins: add 1/2 c grated cheddar cheese, 2 T molasses, and 1/4 tsp ginger.

Makes 15 muffins
