Ground beef |

Jalapeno peppers, seeded and chopped |

Black peppercorns, cracked once |
| 2 tbl |
Curing salt (kosher salt) |
| 1/4 tsp |
Garlic salt |
| 1 tbl |
Liquid smoke |
| 1/4 tsp |
Mustard seed |
| 1/4 tsp |
Onion salt |

Mix all ingredients well. |

Form into 2 rolls and wrap tightly in foil. |

Refrigerate 24 hrs. |

Bake over broiler pan with water at 350 F. for 1 1/2 hrs. |

Remove from foil after baking. |
