2 lb lean ground beef
3/4 lb ground pork
1/2 cup white onion, finely chopped
2 tbl celery, finely chopped
1/2 tsp salt
1 tsp ground black pepper
1 tsp ground cayenne pepper
1 tbl red chile powder
1 tbl Worcestershire sauce
1/2 cup uncooked oatmeal
4 slc soft whole wheat bread, cubed
1/4 cup whole milk
2 lrg eggs
1 cup dried bread crumbs
1 cup Piquante sauce (see recipe below)
Instructions:
Instructions: Mix the meats well with your hands. Add the onion, celery, salt, black pepper, cayenne pepper, chile powder, Worcestershire sauce, 1/4 cup Piquante sauce, and uncooked oatmeal, mix well with your hands. Soak bread in milk; add eggs; beat with mixer on high for 1 minute. Combine the egg mixture with the meat (add a little more milk if the combined mixture seems too dry) and form two loaves. Place the strips of maple cured bacon across the bottom of a baking dish.Place the loaves on top of the beacon.

Score the tops with a wooden spoon and fill with picante sauce. Bake at 350F uncovered for 1 hour. serves: 8
