Ingredients:

3 x Shallots, finely minced
1 tbl Olive oil
2 cup Chicken stock
1 cup Sherry vinegar
1/2 cup Aged sherry vinegar
2 tbl Butter
1 tbl Honey
Instructions:
Instructions: In a saucepan caramelize shallots in olive oil. Add chicken stock and sherry vinegar. Reduce by 1/2. Add aged sherry vinegar and reduce to a sauce consistency. Add butter, honey and season to taste with salt and pepper.
