3 x egg whites
1/2 cup buttermilk
1/2 tsp salt
1 tsp baking soda
Instructions:
Instructions: In a large bowl, beat the egg whites until they start to get bubbly. Mix in the remaining ingredients , one at a time. Blend well after each addition. With a large spoon, pour the batter into a hot non stick skillet that has been sprayed with vegetable oil cooking spray. Flip when the bottoms start to brown. Serve immediately. Since there is no oil in this recipe dont overcook or theyll get tough.

Dont try this batter in your waffle maker. The batter stays moist & makes limp waffles.

Makes 24 pancakes; ! pancake contains less than 1/2 gram of fat.

Variation:
Immediately after youve put the batter in the hot skillet, drop in some slices of fresh fruit. Bananas, strawberries, blueberries & apples are recommended.
