Recipe for Alaska Dungeness Crab Bisque

Amount	Ingredient
1 tbl	minced onion
2 tbl	butter or margarine
2 tbl	flour
2 cup	chicken broth
2 cup	half-and-half
1 lb	dungeness crab meat thawed if necessary
	Salt to taste

Instructions:

Instructions: Saute onion in butter. Add flour; cook and stir 1 minute. Gradually stir in chicken broth and half-and-half; cook and stir 5 minutes.

Break crab into chunks; add to broth. Salt to taste. Heat thoroughly. Garnish with parsley.

This recipe yields 6 servings.
