Instructions: 1 When youre ready to make the sauce, put the milk in a saucepan, add the flour and butter and bring it to a simmering point.

2 Whisk continuously with a balloon whisk, until the sauce has thickened and become smooth and glossy.

3 Turn the heat down to its lowest possible setting and let the sauce cook very gently for five minutes, stirring from time to time. Taste and add the seasoning.
