Instructions: Place the onions, leeks, scallions,garlic, and ginger in a large soup pot with 1 cup of the water. Cook, stirring over medium heat for 5 minutes. Add the remaining ingredients, reduce the heat to low, cover, and cook for another 55 minutes to allow flavors to blend.
