Instructions: With hands, lightly crush almonds into small pieces and set aside.
Combine butter, flour, lemon juice, chives, paprika, cayenne, salt, and white pepper. Add almonds to the flour mixture. Butter an ovenproof pan. Fold sole fillets in half; season lightly with salt and pepper. Distribute almond topping evenly over fillets. Bake at 500F degrees for 12-15 minutes or until fish is firm and top is golden.
