Ingredients:

1 x egg yolks
1 tsp mustard, French
1 tsp garlic, crushed
1/3 cup white wine vinegar
1 tbl sherry
1 tbl vinegar, white
1 tsp lemon, juice of
1/2 tsp sugar (caster)
1 cup almond oil
1/10 tsp white pepper
Instructions:
Instructions: Place all ingredients except almond oil in a bowl and whisk well.

Gradually whisk in almond oil in a thin stream.

Dressing should be creamy.

Use to dress green bean, asparagus, broccoli salads and finish with toasted sliced almonds.
