Instructions: Combine pancake mix, milk or water, orange juice, egg whites and extract, until just moistened. Stir in coconut and orange zest.
Bake on a greased hot griddle, using 1 tablespoon of batter for miniature pancakes, more for standard pancakes. Keep warm until ready to serve. Combine syrup and diced oranges. Heat and serve warm with pancakes. Email this Recipe:
