This quick and fragrant summer dish will have you eating in no time! Fill a large pot halfway with water and bring to a boil. Plunge the tomatoes in, remove the pot from heat, let stand one minute and drain. When cool enough to handle, slip off the skins, dice the tomatoes and set aside. Cook the pasta according to package directions until al dente, then drain. In a serving bowl, combine the pasta and tomatoes the remaining ingredients. Toss well and serve immediately. VARIATIONS: When tossing the pasta, add a cup of diced fresh mozzarella cheese or mozzarella-style soy cheese.
