12 oz angel hair pasta
3 tbl olive oil
2 x cloves garlic, minced
1 tbl chopped fresh parsley
1 lrg pimento or red bell pepper, chopped
1 x poblano chile, roast, peel, seeded
& chopped
1 x serrano chile, seeded and chopped
1/4 cup sliced black olives
1/2 tsp freshly ground black pepper
1/2 lb small to medium shrimp, peeled, deveined,
and cooked

Chopped fresh basil leaves
Instructions:
Instructions: Cook the pasta according to package directions. While it is cooking, heat the olive oil, stir in the garlic, parsley, and pimento, and saute for 3 to 4 minutes. Stir in the poblano and serrano chiles, olives, black pepper, and shrimp, and cook until the shrimp are warm. Drain the pasta, spoon the shrimp sauce over it, toss, and serve with chopped fresh basil or freshly grated Romano or Parmesan cheese, if desired.

SERVING SUGGESTIONS: This pasta makes a wonderful first course or a great main dish served with sliced, toasted bolillos.
