Yield:
2 to three servings
Ingredients:
Amount Ingredient
3 oz diced fresh eggplant
6 oz sliced fresh peppers, red, green or yellow
10 x snow peas
2 oz sliced onions
1/2 cup black olives
1 pch salt and fresh pepper
4 oz olive oil
1 tbl fresh minced garlic
1 tbl fresh basil, chopped
1/2 tbl fresh cilantro, chopped
Splash white wine
16 oz cooked pasta, preferably penne
1/4 cup grated Parmesan cheese
Instructions:
Instructions: In a medium-sized frying pan, saute eggplant, peppers, snow peas, onions, olives and salt and pepper in the oil for about four minutes. Add garlic, basil, cilantro and wine and saute another minute. Toss with cooked pasta, adding Parmesan cheese. Sprinkle parsley over top for presentation.

Makes two to three servings.
