1/4 cup finely-julienned carrots
1/4 cup thinly-sliced celery
1/2 cup cauliflower florets
1/2 cup broccoli florets
1/2 cup seeded, sliced hothouse cucumber
4 x Roma tomatoes julienned
1 med red onion julienned
1/4 cup julienned red bell pepper
1/4 cup julienned green bell pepper
1/4 cup julienned yellow bell pepper
1 cup peas
Citrus Vinaigrette (see recipe)
Instructions:
Instructions: Combine all ingredients in a large bowl and toss with Citrus Vinaigrette dressing. Refrigerate for at least 1 hour, then serve on a bed of butter lettuce.
