Instructions: Antipasti are the italian version of hors d oeuvres. An excellent opportunity to use your imagination in preparing small piquant delicacies. It is impossible yo give precise quanitities your best course is to assemble a dish of anitipasti from whatever you happen to have in the refrigerator.

Here are some suggestions

Roll up slices of mortadella and stuff with capers. Add coiled up anchovies and slices of hardboiled egg.

Fill artichoke bottoms with hollandaise sauce. Add a few black olives and some salad. Garilish slices of smoked salmon with cress. Add a lemon slice garnished with caviar or lumpfish roe and some stuffed green olives.

Wrap chilled pieces of melon in pieces of smoked ham Add slices of celery and carrot slices cut into decorative shaps with a serrated knife dressed with a little oil vinegar salt and pepper.

Season tomato quarters with salt and pepper place onion rings on rop garnish with pearl onions add a little oil and vinegar.

Dress asparagus with oil vinegar salt and pepper garnish with chopped hardhoiled egg Arrange canned tuna fish with artichoke hearts in a salad dressing.

Garnish with strips of red peppr and celery leaves.

Serve antipasti with rolls and buter
