Instructions: Preheat oven to 200c/400f.
1 Boil and drain the potatoes as per the packet instructions. Lay the pancetta slices on a baking tray and bake in the oven until golden and crispy. Once cooled, break into pieces. 2 Melt the butter in a pan, add the garlic and a squeeze of lemon juice. Stir through the parsley and pour over the potatoes. Serve topped with the bacon.
