Instructions: Slice the apples thinly, combine in pan with sugar, water, cinnamon, bring to the boil and simmer covered 10 minutes or until apples are tender. Drain off liquid.
Melt butter in pan, add brown sugar, apple juice and cream and stir until combined. Bring to the boil and simmer, uncovered, about 5 minutes until syrupy. Stir in apples and rum and heat through. Lay crepes out on serving plate and fill with apple. Fold over crepe and spoon extra sauce over. Crepes and filling can be prepared ahead and reheated in the microwave.
