In an additional tablespoon of sour cream if mixture seems too dry. Shape into a ball, and chill 30 minutes. Roll dough to 1/8 inch thickness on a lightly floured surface. Fit pastry into a 9 inch round tart pan; trim edges. Peel and core apples; slice each into 16 wedges. Arrange wedges in tart pan shell. Combine sugar, 1/4 cup flour, pinch of salt, egg yolks, and 1/3 cup sour cream; mix well. Pour evenly over apples; bake at 350 degrees F. for 55 to 60 minutes or until set.
