4 cup apples thinly sliced and peeled - tossed with
1 tbl lemon juice
1/2 cup golden raisins
1/3 cup ground almonds
3 tbl honey
3 tbl maple syrup
1 tsp grated lemon rind
1 tsp ground ginger
8 sht phyllo pastry
3 tbl light margarine melted
Instructions:
Instructions: Preheat the oven to 375F.

In a large bowl, toss the apples with the raisins, almonds, honey, syrup, lemon peel, and ginger.

Coat a baking sheet with cooking spray. Place 1 phyllo leaf on the sheet, and brush it lightly with margarine. Top it with another leaf, and brush with a little more margarine. Repeat layering with 2 more leaves of dough. Spread half of the apple filling lengthwise along 1 side of the dough. Roll up all 4 layers of dough, starting at the side with the filling and ending with the seam side down. Repeat the entire process with the remaining 4 leaves of dough. Coat each strudel with cooking spray.

Bake until lightly browned, 15 to 20 minutes. Sprinkle with the sugar, if using. Serve warm.
