3 cup all-purpose flour unsifted
1 tsp baking soda
1 tsp salt
1/2 tsp nutmeg
1/2 tsp cinnamon
1/2 cup corn oil
2 cup sugar
3 x eggs
2 tsp vanilla
1 cup pecans
2 cup finely chopped apples
1/2 cup raisins
----------------- For the syrup ----------------
1/2 cup applejack brandy
1/2 cup apple juice
1/4 cup brown sugar
Instructions:
Instructions: Combine flour, baking soda, salt, nutmeg and cinnamon. Set aside.

In large bowl of an electric mixer, at medium speed, beat together the oil, sugar, eggs and vanilla until thoroughly combined. Gradually beat in flour mixture until smooth. Fold in pecans, apples and raisins. Pour into a greased and floured 10-inch tube pan. Bake at 325 degrees for 1 1/4 hours. Cool in pan for 10 minutes.

To make syrup for soaking: Combine brandy, apple juice, brown sugar and butter in a saucepan. Bring to a boil, stirring constantly. Cook until sugar is dissolved. Prick top of warm cake with a fork. Carefully spoon the syrup over the cake.
