3 qt apple juice
1/2 lb honey
5 x - 7 cloves
1 stk cinnamon
2 slc fresh ginger root
Instructions:
Instructions: Heat the apple juice to just below boiling (approx 200 F). Place the spices in a loose muslin (or fine cheescloth) bag and hang in the warm juice. Cover the juice and allow to steep overnight. (Your kitchen will smell wonderful!) Make a yeast starter and allow it to work overnight, as well. Add the honey to the spiced juice and reheat to (155 F). When cooled to approx 95 F add the yeast starter and ferment.
