Instructions: Mix and sift flour, soda, cinnamon, and salt. Beat oil and sugar together until thick. Add eggs, one at a time, and beat well after each addition. Add remaining ingredients and mix. Bake in 2 greased and floured and baking parchment paper lined pans, 8" size. Bake in a 350 oven for 50 minutes. Cool 10 minutes, remove from pans, and cool. Frost with Cream Cheese Frosting.

Cream Cheese Frosting: Cream cheese and butter. Beat until light; add vanilla. Gradually add powdered sugar until spreading consistency.
