Instructions: Preheat oven to 350 degrees F. Grease and lightly flour eight 6 oz custard cups. Pare, core, and cut apples into 1/2 inch dice. you should have about 2 cups. Combine the 1 1/2 tablespoons sugar and the cinnamon with the apples in the medium-size bowl; toss to combine. Combine the eggs, 2/3 cup sugar, and vanilla in large bowl. Beat with mixer at low speed until ingredients are combined. Then beat at high speed until mixture is very thick and pale, about 5 minutes. Sift together flour and baking powder onto wax paper. Sift together again. Fold lightly into egg mixture. Fold apple mixture and chopped nuts into batter. Turn into prepared custard cups. Place on baking sheet. Bake at 350 degrees F. oven for 25 to 30 minutes or until top is crispy. Serve with dollop of whipped cream.
