Instructions: Combine first six ingredients in a large mixing bowl; stir well.
Combine milk of choice, lemon juice, vanilla, honey, molasses, oil, and tofu in small bowl; stir well. Add liquid mixture to flour mixture, stirring until smooth. Fold in apple. Let stand 5 minutes. Spoon about 1/4 cup batter for each pancake onto a hot, nonstick griddle or nonstick skillet coated with cooking spray. Turn pancakes when tops are covered with bubbles and edges look cooked.
