Instructions: Line a 9-inch square baking pan with aluminum foil, allowing 6 inches of foil to extend over two opposite sides of pan. Coat foil with cooking spray; set aside.
Cream 2 tablespoons margarine and sugar at medium speed of an electric mixer until light and fluffy (about 5 minutes). Add egg whites; beat 2 minutes at medium speed or until well blended. Add milk, applesauce, and vanilla; mix well. Combine 1-1/3 cups flour, baking powder, and salt. Add to creamed mixture, stirring just until moistened. Spread into prepared pan; arrange apple slices in a single layer in 3 rows, core side down, on top of batter, pressing gently into batter. Combine 3 tablespoons flour, brown sugar, and cinnamon; stir well. Add melted margarine, and toss well; sprinkle over apples. Bake at 350 deg for 45 minutes or until browned; cool completely in pan. Yield: 9 servings (serving size: 3-inch square piece). Message Tried this last night with some of my newly bought Jonagold apples from my local orchard. Its great.
