400 gm apples, Granny Smith
167/1000 cup sugar (caster)
1/10 tsp cinnamon, ground
1/3 cup saltanas
3/4 tbl apricot jam
150 gm butter
1/2 cup fresh breadcrumbs
1/2 tbl almonds, flaked

Peel, core and slice the apples.

Melt 20 gm butter in a frying pan and cook the apples to just soften them. Combine in a bowl with remaining filling ingredients and mix gently to ensure the apples dont break up.

Philo pastry:
Lay out a sheet and brush lightly all over with melted butter. Lay another sheet over and again brush with butter.

Repeat using 6 more sheets.

Place the filling down the center, leaving 5cm at each end. Roll up and seal ends, making sure the join is on the bottom, place on a greased baking tray and brush all over with butter.

Bake 170C/360F for 30 minutes until golden in colour.
