4 slc bread white, firm
2 tsp margarine melted
2 med apples chopped
1/4 cup walnuts chopped
2 cup milk, 2% lowfat
1/2 cup egg substitute, frozen thawed
1 tsp vanilla
1 pkt vanilla pudding mix sugar-free
Instructions:
Instructions: Heat oven to 350 . Lightly brush bread with margarine; cut into 1/2" cubes. Place on cookie sheet. Bake 10 minutes or until lightly toasted. Place cubes in shallow 1 - 1/2 quart baking dish. Add apples and walnuts; toss lightly. Pour milk, egg substitute and vanilla into mixer bowl. Beat with a wire whisk until well blended. Add pudding mix and 1/2 teaspoon cinnamon. Whisk until blended. Pour over bread mixture; sprinkle with remaining cinnamon. Bake 30 minutes. Remove from oven; let stand 10 minutes before serving.
