By the time the potatoes and apple in this recipe are tender and can be mashed together, there is just enough liquid remaining to make the mixture creamy. A whisk or electric hand mixer can be used for mashing, but dont overdo this; the puree should be somewhat chunky, with pieces of apple peel providing a chewy contrast. Place the potato, apple, and salt in a saucepan with the water. Bring the mixture to a boil, cover, reduce the heat to low, and boil gently for 30 min, until the potatoes and apple are tender. Add the butter, and mash the mixture by beating it with a whisk or an electric hand mixer until creamy but still somewhat chunky. Serve immediately.
