1/2 kg apples
1/2 kg quinces
7 gm enzyme
2 x camden tablets
900 gm white sugar
Instructions:
Instructions: Slice or pulp fruit. Place immediately in plastic fermentation bin in which 3 L of water the nutrients and the camden tablets have been mixed. Stir in enzyme and add the yeast the next day. Stir once or twice a day for next week and then strain through muslin and dissolve sugar in the juice, make up to 4.5 L water.

Pour liquid into fermentation demi-john insert air lock and keep at 15 to 18 deg C. Leave until fermentation stops. Transfer to cool room and leave for 2 to 3 weeks. Syphon off the wine leaving yeast deposit. Keep wine in a sealed demi john for 3 months and then syphon the wine into bottles.
