Instructions: Grate apple and mix with ricotta, eggs, honey, spices and salt. Sift in flour and baking powder and mix until combined.
Butter or oil a heavy-based frypan or non stick pan, and heat. Cook pancakes individually, adding 1/2 cup of the batter at a time. When top bubbles and bottom browns, flip over and brown the other side. Serve with cream, ice-cream, maple syrup and fresh fruit, or on their own. Ricotta is available at most delis and supermarkets.
