Instructions: Mix 1/2 cup water and fajita seasoning and pour over chicken in a medium skillet. Cook over medium-high heat until chicken is no longer pink, about 5 to 7 minutes. Remove from heat and set aside to cool.
Meanwhile, place 2 tortillas on a large plate and top each with 1/2 cup cheese. Top each with additional tortilla and microwave, covered, for 1 minute. Top each tortilla with 1/2 the chicken, lettuce and Pico de Gallo. Fold in the sides of each tortilla and roll. Cut each tortilla in half and serve with Applebees Mexi-Ranch Dressing for dipping sauce. This recipe yields 2 servings. Email this Recipe:
