Instructions: Combine first five ingredients in a large bowl and set aside for the cereal
to soften. Combine flour, baking powder,spices, salt and sugar in a small bowl. Add dry ingredients to cereal mixture and stir until blended. If batter is too thick add a little more skim milk, too thin add some flour. Prepare muffin tin using PAM or paper liners. Fill muffin tins and bake in 400 F oven for 20 -25 minutes. NOTES : Mary Flesch adds: I always throw in some grated carrots and grated zucchini for extra fiber and more veggies. I dont measure how much but about 10-12 baby carrots (you know, those convenient ones already peeled) and 1 small zucchini is about enough for one batch. Email this Recipe:
