2 tbl oil
1 lrg onion, thinly sliced
1 med head red cabbage, coarsely shredded
(about 6 cups)
1 cup apple juice
1/4 cup apple cider vinegar
3 x juniper berries
3 whl cloves
1 x bay leaf
4 cup coarsely shredded greens
(kale or beet or kohlrabi tops)

One of my fondest childhood memories is of the sweet spicy smell of my fathers "Rotkraut" mingling with juniper and cloves.

1. In a large heavy saute pan or Dutch oven over medium heat, saute onion in oil until golden, about 10 minutes.

2. Add cabbage, apple juice, vinegar, juniper berries, cloves, and bay leaf, Mix well, cover, and cook over low heat for 30 minutes, until cabbage is tender.

3. Add greens and cook for 10 minutes more. Salt and pepper to taste. Serve warm or at room temperature.

Makes 6 servings. Vegan
