Instructions: Generously grease a 9-by-13-inch baking pan with butter or margarine.
To prepare base: In a large bowl, combine cake mix and melted margarine. Beat at low speed with electric mixer until crumbly. Stir in almonds. Reserve 1 cup mixture for topping. Press remaining base mixture in bottom of prepared pan. Carefully spread preserves over base. (For ease of spreading, preserves can be warmed slightly.) To prepare filling: In same bowl, beat cream cheese, sugar, flour, salt, vanilla and egg until well mixed. Blend in preserves at low speed. Carefully spread filling mixture over base. To prepare topping: Combine reserved base mixture and coconut; sprinkle over filling. Bake in preheated 350-degree oven 30 to 40 minutes or until golden brown and center is set. Let cool completely. Cut into 36 squares. Store in refrigerator. Yield: 36 squares. Email this Recipe:
