Instructions: In large bowl, cream shortening and sugar.
Beat in eggs 1 at a time, beating well after each addition. Blend in bananas and lemon juice. Mix together flour, baking soda and salt. Blend into banana mixture; stir in apricots. Turn into greased and floured 9x5x3 inch loaf pan. Bake in 325 degree oven 1 hour and 10 to 20 minutes, or until cake tester inserted in center comes out clean. Remove from pan and cool.
