Instructions: Chop apricots and onion. Peel core and chop the apple.
Place in a large saucepan with the spices and the vinegar. Simmer steadily until fruit softens. Remove the bag of spices, then put in the saltanas, salt and sugar. Stir until the sugar is dissolved and cook until the consistency of jam. Fill warm jars and seal. Keeps for 3-4 months. Ensure storage jars are well sterilised. Serve with chicken, pork, ham.
