1 pkt Pillsbury Plus french vanilla cake mix
1/3 cup butter or margarine melted
1 x egg

1 jar apricot preserves (12 oz.)
1 pkt cream cheese (8 oz.) softened
1/4 cup sugar
1/2 tsp vanilla
Instructions:
Instructions: Preheat oven to 350F. Grease a 13x9x2 pan. In a large bowl, combine cake mix, butter and egg. Mix with a fork until just crumbly. Gently spoon 1 1/2 cups into measuring cup and set aside for topping. Press the remainder of the crumb mixture into the bottom of pan and bake for 10 minutes. Spread preserves over baked crust. In a small bowl, combine cream cheese, sugar, vanilla and egg; beat until smooth. Spread over preserves. Sprinkle reserved topping mix over cream cheese mixture. Bake for 28-30 minutes until light golden brown. Chill and then cut into squares. Store leftovers in refrigerator.

NOTES : Dont over mix the crumb mixture or it will form a soft dough! For a variation, you may use raspberry or strawberry preserves.
