Heat the water to a simmer. Add the apricots. Let set for 15 minutes, or until soft. Drain and cool. In a blender, combine the apricots with all the remaining ingredients and blend until smooth. Store in an airtight container in the refrigerator for up to 1 week. NOTES : This is perfect for crunchy greens like romaine, Napa cabbage, and iceberg lettuce. you can also make this dressing with fresh stone fruit like peach, nectarines, and apricots.
