Instructions: Bring apricots and water to a boil. Reduce heat and simmer for approximately 30 minutes. Be careful not to let mixture scorch. Allow water to cook down. Add sugar to apricots. Let apricot filling cool completely before filling pastry circle. Place several tablespoons of cooled apricots in each pastry circle and fold in half. Seal edges with flour dipped fork. Heat 6 tablespoons of oil in 10-inch heavy skillet.
Fry until brown on each side (adding oil if necessary). Drain on paper towels. Allow to cool. Makes 10 pies. Email this Recipe:
