100 gm sugar (caster)
75 ml water
1 tsp lemon juice
Instructions:
Instructions: Combine all ingredients in a small saucepan, bring to the boil, stirring constantly.Boil fast to thicken.

Strain through a fine sieve and use while hot.

Brush onto pastries or cakes to glaze.

Can also be made with other types of jam.

Gives a glossy finish to pastries.
