Instructions: Try this beta-carotene rich drink when you need a lift. Depending on availability, you can use fresh or dried fruit, or you can combine fresh and dried if youd like.
For fresh apricots: Put apricots and papaya in food processor or blender and process until smooth. Add a little water if needed for consistency. For dried apricots: In medium saucepan, combine dried apricots with 1/2 cup water. Cover and simmer until apricots are plumped and softened, about 5 minutes. Transfer to food processor or blender and add another 1/2 cup water and papaya. Process until smooth. Pour or spoon mixture into serving glasses and garnish with mint leaves. Makes 2 servings.
