Instructions: Cook rice with water till tender; drain. Drain the apricots, saving saving 3 Tbsp syrup. Combine syrup, cooked rice and orange juice concentrate.
Spoon into 2-cup baking dish; top with apricots and bake at 375 degrees for 20 minutes. Variation: Substitute long-grain brown rice or a blend. Description: "Use leftover rice or made fresh" Yield: "1 1/2 cups" NOTES : If the goal is to up the fiber and keep the cost down, then fruited rice is one way to go. Could freshen leftover rice.
