170 gm noneedtosoak dried apricots
40 gm butter or margarine
3 x eggs plus 1 egg yolk size 3
2 tbl double cream
60 gm fresh breadcrumbs
30 gm caster sugar
1 pch nutmeg
Sugar for sprinkling
Instructions:
Instructions: Cut the apricots into quarters.

Melt the butter in the frying pan stir in the apricots and cook them gently for 5 minutes.

Beat the eggs and egg yolk with the cream. breadcrumbs sugar and nutmeg.

Pour this mixture over the apricots and stir gently until well mixed.

Cook gently for 5 minutes until golden underneath.

Brown the top under a hot grill for 3 to 4 minutes.

Turn out on to a warm serving plate
Sprinkle with sugar and serve warm with yogurt cream or icecream
