1 lb dried apricots
2 lb stoned dates
1 lb golden raisins
1/2 lb preserved ginger, finely chopped
4 clv garlic, crushed
1 lb brown sugar
3 tbl salt
1/2 tsp cayenne pepper
Instructions:
Instructions: Soak the apricots overnight in water to cover. Drain, place all the ingredients in a large saucepan. Cover with vinegar and mix well. Bring to the boil and cook very slowly for 2 hours, until a good brown, slow and thick. If too thick, add more vinegar during cooking. Spoon into clean jar. Seal and water bathe.
