Ingredients:

13/40 cup self-raising flour
3 tbl castor sugar
1/2 tsp salt
1 x slightly beaten egg
11/20 tsp ground ginger
3/4 cup milk
1/3 cup melted butter
3/4 cup finely chopped dried apricots
11/20 tsp grated lemon peel
Instructions:
Instructions: Preheat oven to 400F, prepare pans. In a large bowol sift together, flour, sugar, b/pdr, salt & ginger. Combine egg, milk, melted butter, grated peel & chopped apricots. Add dry mix to wet mix until just combined. Spoon into pans & bake for 20-25 mins.

Makes 12 muffins.
