Ingredients:

1/2 cup cracked wheat (burghul)
50 gm butter
3 x zucchini, medium
1 tsp garlic, crushed
1 tbl mint jelly
2 tbl chopped fresh mint
1/2 cup dried apricots
1/2 cup fresh breadcrumbs
1 x eggs
Instructions:
Instructions: Cover cracked wheat with boiling water and leave to stand for 15 minutes. Drain and rinse well under cold water. Allow to drain well.

Chop dried apricots.

Heat butter in a pan and gently cook zucchini and garlic until zucchini is soft. Remove from heat, stir in mint jelly and mint, then wheat, apricots, breadcrumbs, egg and seasoning. Mix well until combined.

Use as a stuffing for boned and rolled leg or loin of lamb.

Use to stuff roast lamb, pork or chicken dishes.
