Ingredients:

250 gm Self raising flour, (8oz)
1/2 tsp Salt
1/4 tsp Cinnamon
50 gm Solid vegetable oil, (2oz)
125 gm Ready to eat apricots, roughly chopped (4oz)
50 gm Walnut pieces, (2oz)
25 gm Soft dark brown sugar, (1oz)
150 ml Soya milk, ( 1/4 pint)
Instructions:
Instructions: Preheat the oven to 230 C, 450 F, Gas Mark 8.

Sift the flour, salt and spice into a bowl. Rub in the fat until the mixture resembles fine bread crumbs.

Stir in the apricots, walnut pieces and sugar, add the milk and mix to a soft dough. Knead gently until smooth.

Roll out the dough on a lightly floured surface to a 1 cm ( 1/2 inch)

thickness and cut out 8-10 rounds with a 6cm (2 1/2 inch) biscuit cutter.

Transfer to a greased baking tray, brush tops with milk and bake on the middle oven shelf of the preheated oven for 8-10 minutes until well risen and golden brown.

NOTES : Delicious quick and easy to make scones, suitable for vegans.
