Instructions: Preheat the oven to 230 C, 450 F, Gas Mark 8.
Sift the flour, salt and spice into a bowl. Rub in the fat until the mixture resembles fine bread crumbs. Stir in the apricots, walnut pieces and sugar, add the milk and mix to a soft dough. Knead gently until smooth. Roll out the dough on a lightly floured surface to a 1 cm ( 1/2 inch) thickness and cut out 8-10 rounds with a 6cm (2 1/2 inch) biscuit cutter. Transfer to a greased baking tray, brush tops with milk and bake on the middle oven shelf of the preheated oven for 8-10 minutes until well risen and golden brown.
